Stuffed mushrooms / Champiñones rellenos

I love mushrooms and I am always looking for different ways to cook them.
I bought these beautiful Brown Mushrooms at the farmers market
Look at these beauties.



 A few nights ago I tried a different way to stuff them, I used a Julia Child's recipe and they turned out Amazing!!.

Here is the recipe:

What you need:



For the mushrooms:

A shallow, light buttered roasting pan
6 mushrooms, stems removed
Aprox 2 tbsp of butter (it is french cooking so of course butter)
Salt and pepper

For the filling:

3 tbsp finely minced  shallots or onions
2 tbsp melted butter
1 tbsp oil
3 tbsp, finely minced green onions or chives
Stems from the mushrooms caps, finely minced.
1/4 cup of port wine (optional)
3 tbsp fine, dry breadcrumbs.
1/4 cup of grated parmesan cheese
1/4 cup of any other strong cheese like aged cheddar, swiss or  anything you like.
4 tbsp minced parsley
1/2 tsp of tarragon
Salt and pepper
3 tbsp Heavy Cream

3 tbsp parmesan cheese for topping
2 tbsp melted butter for topping

What to do with it:

Preheat oven to 375 F.
Brush the mushrooms caps with melted butter. Place them, hollow-side up, in the roasting pan. Sprinkle lightly with salt and pepper and put aside.



In a pan, sauté the onions in butter and oil for 3 to 4 minutes without browning.


Then add the green onions or chives and mushrooms stems, sauté for about 1 minute.













Add the port  (if using) and boil it down rapidly until it has almost entirely evaporated and removed from heat.





In a separate bowl mix in the breadcrumbs, cheeses, parley, tarragon and seasoning. A spoonful at a time, blend in just enough cream to moisten the mixture but keep it sufficiently stiff to hold its shape in a spoon, add more if necessary and check for seasoning. When mixed, add to the onion and port mixture and mix well.




Fill the mushroom caps with the stuffing. Top each with a pinch of parmesan cheese and drops of melted butter.




 Bake for 15 to 20 minutes, or until caps are tender and stuffing has browned lightly on top.

Serve immediately.

Yo adoro los champiñones y siempre estoy buscando nuevas maneras de prepararlos.
Compré estos Champiñones marrones en el mercado publico.

Hace unos días probe una nueva manera de rellenarlos, usé una receta de Julia Childs y quedaron buenísimos!!.
Acá esta la receta:




Para los champiñones:
Un plato para hornear ligeramente engrasado con mantequilla.
6 champiñones.
Aprox. 2 cucharadas de mantequilla
Sal y pimienta

Para el relleno:
3 cucharadas de cebolla finamente picada.
2 cucharadas de mantequilla derretida
1 cucharada d aceite vegetal
3 cucharadas de cebollin finamente picado
Los tallos de los champiñones finamente picados
1/4 taza de Oporto (opcional)
3 cucharadas de pan rallado
1/4 taza de queso parmesano
1/4 taza de otro tipo de queso fuerte como suizo.
4 cucharadas de perejil picado
1/2 cucharadita de estragón
Sal y pimienta
3 cucharadas de crema de leche de minimo 30% de grasa

Que hacer con esto:

Calentar el horno a 375F.
Con una brocha de cocina y la mantequilla derretida,  enmantequillar los champiñones ligeramente. Ponerlos en el plato para hornear con el hueco hacia arriba. Rociar con un poquito de sal y pimienta y poner aparte.


En una sartén, sofreír la cebolla en mantequilla y aceite por 3 a 4 minutos sin que se doren.



Luego agregar a la sartén el cebollin  y los tallos.

















Agregar el Oporto (si se va a usar) y dejarlo hervir rapidamente hasta que este casi todo evaporado y luego remover del calor.




En un bol aparte, mezclar el pan rallado, quesos, perejil, estragón y sazonamiento.
Agregar la crema poco a poco, una cucharada a la vez hasta que  cuando agarres la mezcla con una cuchara,  no pierda la forma. Luego agregar la mezcla con el oporto y mezclar bien.


Rellenar los champiñones con la mezcla. espolvorear con un poquito de queso parmesano y unas gotas de mantequilla derretida.




Hornear por 15 a 20 minutos o hasta que los champiñones estén suaves y el relleno este dorado por encima. Servir inmediatamente.

Eggplant Calabrese / Berenjenas Calabresas






Eggplants, I love them but I know lots and lots of people that hate them so much and I just don't get it. One of those people is my husband, he doesn't eat vegetables as it is and eggplant well that will never happen, so every time I buy eggplant, I just buy one and eat it all by myself, until.......I was watching the food network and saw a recipe by Giada de Laurentis call Eggplant Calabrese, it looked so good. Well, I made it last night and my husband LOVED them, which is like a miracle.
This recipe is easy, delicious and so versatile, I made the veggie version but I am planning on making it with meat next time.

But before I give you the recipe let me tell you a few things I learned about eggplants:

- Eggplants aren't really a vegetable, they are berries.
- Eggplants and tomatoes are related, they are both from the nightshade family with the famous literary poison, deadly nightshade. But eggplants aren't toxic so don't worry.
- The eggplant is believe to have originated in India, where it is considered to be the king of vegetables.
- When choosing an eggplant, it should be firm and not too large. The length of a cucumber and the general circumference of a large pear should be about right. Smaller eggplants are less likely to be bitter (a bit of salt can help with this) and have fewer seeds.

What you need:

Vegetable oil cooking spray
1- 1 pound eggplant, ends trimmed and cut in half, lengthwise.
2 tbsp olive oil
1 cup of freshly grated parmesan cheese
1/2 cup of breadcrumbs or Panko (my favourite)
1/4 cup of freshly chopped basil leaves
1 large egg, beaten
3 cloves of garlic.
2 tbsp fresh parsley
2 cups of jarred marinara sauce
Vegetable oil for frying
1/2 cup of fresh parmesan cheese to serve.

What to do with it:

Place an oven rack in the centre of the oven and reheat at 400 F. Spray with vegetable oil a baking dish big enough for the eggplant to fit in. Place the eggplant cut side up on the baking dish, make 1/2 inch slit over the surface of the eggplant halves. Drizzle with the olive oil and bake until golden and tender, about 30 minutes. Removed from oven and let cool








Once the eggplants are cool, using a food processor, scoop out the flesh using a spoon and possibly your hands and place in the food processor, add the cheese, breadcrumbs, basil, egg, garlic and parsley. Pulse until the mixture is think enough to form into balls, add more breadcrumbs if necessary








Using a spoon, make balls about the size of a ping pong ball, each about 2 tbsp of mixture and place in a baking sheet or big plate, an ice cream scoop works great for this.




Pour enough oil in a deep pan to cover the eggplant balls. Heat the oil over medium heat until the oil reaches 350F, you will need a deep-frying thermometer for this but if you don't have a thermometer (which you should), drop a cube of bread in the oil and if it browns in about 4 minutes then it is ready; in batches to avoid overcrowding, drop the balls in the oil until they are golden, about 1 minute each, drain on paper towels and serve warm or cold with the marinara sauce and sprinkle with extra cheese........sooooooo good.

Berenjenas, toda la vida me han gustado pero desafortunadamente conozco a muchas personas que no las soportan. Una de esas personas es mi esposo, de por si que el no come vegetales y pues berenjenas, nunca jamas las comería así que cada vez que compro berenjenas me compro solo una ya que es solo para mi, hasta que estaba viendo un programa de comidas en la television de la cocinera italiana Giada de Laurentis y dio una receta llamaba Berenjenas Calabresas, se venia buenísimas y decidí prepararlas anoche, pues que te puedo decir, mi esposo se las devoro, le encantaron. La próxima vez las voy a combinar con carne.

Pero antes de darles la receta déjame darte unos datos que aprendi de las berenjenas:
-Las berenjenas no son un vegetal, son bayas.
- Las Berenjenas y los tomates son de la misma familia, la solanáceas, ósea las Belladonna conocida como la hierba de las brujas, sus alcaloides la convierten en una planta venenosa, capaz de provocar estados de coma o muerte si es mal administrada, pero no se preocupen que la berenjena no es venenosa.
- La berenjena se cree que es originada de la India donde es considerada El Rey de los Vegetales.
- Cuando compres berenjenas tienes que buscar una que sea firme y no muy grande, con el largo de un pepinillo y la circunferencia de una pera grande. Berenjenas pequeñas tienden a ser menos amargas y tienen menos semillas.



Lo que necesitas:

Aceite en spray
1 berenjena de medio kilo con las puntas cortadas y picada por la mitad a lo largo.
2 cucharadas de aceite de oliva
1 taza de queso parmesano recién rallado
1/2 taza de pan rallado
1/4 taza de albahaca fresca picada
1 huevo grande batido
3 dientes de ajo
2 cucharadas de perejil fresco
2 tazas de salsa de marinera casera o de frasco
Aceite vegetal para freír
1/2 taza de queso parmesano para servir

Que hacer con esto:

Recalienta el horno a 400F. En un plato de horno suficientemente grande para poner las berenjenas, rocia el plato con el aceite en spray para evitar que la piel se pegue al mismo. Colocar la berenjena en el plato con el lado cortado para arriba y usando un cuchillo pequeño hazle cortadas de 2 cm aprox,  rocialas con el aceite de oliva y hornear por 30 minutes hasta que esten suaves y doradas. Sacar del horno y dejar enfriar.





Cuando esten frias, sacarle la carne con una cuchara y ponerla en un food processor, agregar el queso, el pan rallado, albahaca, huevo, ajo y perejil. Mezclar todo lentamente hasta que tenga la consistencia perfecta para hacer pelotas, si esta muy aguada, agregar mas pan rallado para espesar.





Con una cuchara normal o de helados haz las bolitas de berenjenas del tamaño de una pelota de ping pong, como 2 cucharadas de mezcla por bolita y ponlas en un plato o bandeja hasta freír.






En una olla grande y profunda calienta suficiente aceite para que cubra las bolitas, la temperatura del aceite tiene que ser de 350F, necesitas un termómetro de freír para esto, si no tienes uno ve a comprarlo y mientras tanto tira un cubito de pan en el aceite y si se dora en 4 minutos esta listo.
 Poco a poco y sin poner muchas bolitas a la vez, freirlas hasta que esten doradas, como por 1 minuto cada una, al sacarlas ponlas en un plato con toallas de papel para eliminar el acceso de aceite y servirlas calientes o frías con la salsa marinera y parmesano rallado.

Mango Margarita with Chili Pepper Salt and Lime.

Summer is here, well somedays....it comes and goes, the weather can't quite make up its mind, but I know its coming and with it, warm weather and cold, yummy drinks.
Here is one I can't wait to make.

Mango Margarita with Chili Pepper Salt and Lime, yes, you read that right, Mango and Chili in a Margarita...Oh YES..I am drooling already.

I got this recipe from  foodiecrush.com and I think it is genius.



Here what you need:

2 Mangos, peeled, pitted and cut into chunks
2 cups of ice
6 ounces of Tequila
4 ounces of Cointreau
3 ounces of fresh lime juice
1 tsp of super fine sugar
1 tbsp chili powder
1 tbsp kosher salt





What to do with it:

In a blender that can handle ice, puree the mango then add the ice, tequila, Cointreau, lime juice and sugar and blend until desired consistency.

In a small plate mix the chill powder with salt. Moist the rim of the glass with lime wedges, dip the rim in the chile powder mixture and twist to coat, fill the glass with margarita mixture and enjoy, or if you are not into chili, avoid it completely and you can just get a big straw and drink it stray from the blender, whatever you prefer.

Al fin llego el Verano...buen, algunos días, viene y se va, el tiempo esta confundido, pero yo se que ya esta por llegar y con los días calientes vienen las bebidas frías y refrescantes y acá va una que estoy loca por preparar.

Margarita de Mango con Ají Picante y Lima, así como lo lees, Mango y Ají en una Margarita....estoy salivando.

Esta receta la consegui en foodiecrush.com y esta genial.



Lo que necesitas:

2 mangos medianos, pelados, sin semilla por supuesto y picados.
2 tazas de hielo
6 onzas de tequila
4 onzas de Cointreau (Licor de Naranja)
3 onzas de jugo de lima fresco
1 cucharadita de azúcar fina
1 cucharada de ají en polvo
1 cucharada de sal gruesa



Que hacer con esto:

En una buena licuadora que te aguante el hielo agrega el mango y licuarlo, luego agrega el hielo, la tequila, el cointreau, jugo de limon, azúcar y licuar.

Luego en un plato mezclar el ají en polvo y la sal. Humedecer el borde del vaso con la rodaja de limon, pasar sobre la mezcla de chili y girar para que todo se adhiera.
Luego llenar el vaso con la mezcla y disfrutar.
Si no te gusta la idea del chili, omite esa parte por completo o si quieres, consigue un pitillo(Colombia, Venezuela), popote (México) or Pajilla (en otros países) bien grande y tomate la Margarita directamente desde la licuadora.

Cream of Shiitake Mushrooms / Crema de Champiñones Shiitake





I bought these beautiful Shiitake Mushrooms because  I was going to sauté them with garlic and wine, but I kind of forgot I bought them so before they got bad I decided to make cream of mushroom soup instead.
This is a very easy recipe, very rich soup and so comforting, specially for a cold winter day or night.

You don't have to use shiitake mushroom, any mushroom will work.

First let me tell you a bit about Shiitake Mushrooms.
Long a symbol of longevity in Asia because of their health-promoting properties, shiitake mushrooms have been used medicinally by the Chinese for more than 6,000 years. These exotic hearty mushrooms with a rich, smoky flavour can now be found in supermarkets across U.S and Canada throughout the year. It is the third most widely distributed mushroom in the world. People eat them raw, cooked or dried, making them a versatile food you can incorporate into a wide array of meals. Raw shiitakes offer the largest number of health benefits, but dried shiitakes are also rich in vitamins and minerals. Cooking them, however, depletes it of a large portion of its nutrients.


Cream of Shiitake Mushrooms.


What you need:

4 cups of broth, I used vegetable because I didn't have mushroom broth but any broth will work, or water.
1 tablespoon olive oil
1 tablespoon butter (there is always butter)
1 cup of onions, finely chopped
3 cups of mushrooms, you can use one kind or assorted wild mushrooms, sliced.
3 garlic cloves, minced
3 teaspoon chopped fresh thyme
1 cup 35% heavy cream

What to do with it:



Heat olive oil and butter in a large pot over medium high heat. Add onions and sauté until tender, for about 5 minutes.


Add mushrooms and sauté until golden brown and tender, about 8 minutes.


Add mince garlic, thyme, and sauté for another 2 minutes. Add the broth, cream and bring to a boil.




Reduce the heat to medium and simmer gently until soup thickens slightly, about 10-12 minutes. Transfer soup to a blender and in small batches , if necessary , puree until smooth. Return to pot. Bring soup to simmer. Season with salt and pepper to taste and serve.

Compre estos Champiñones Shiitake porque quería prepararlos al ajillo con vino pero se me olvido que los compre y antes de que se me dañaran decidí preparar  una crema de champiñones.
No tienes que usar shiitake, cualquier champiñón funciona.

Déjame culturizarte un poco.

Por mucho tiempo los hongos or setas shiitake han sido un símbolo de la longevidad en Asia debido a sus propiedades promotoras de salud y las setas shiitake se han usado medicinalmente por los chinos por mas  de 6.000 años. Son abundantes, exóticas, con un rico sabor ahumado y ahora se pueden encontrar en los supermercados de EE.UU. y Canadá a lo largo del año. Es la tercera seta más ampliamente distribuida en el mundo. La gente se las come crudas, cocidas o secas, por lo que las convierte en un  alimento versátil y que se puede incorporar en una amplia gama de comidas. Los shiitakes crudos ofrecen la mayor cantidad de beneficios para la salud, pero shiitakes secos son también ricos en vitaminas y minerales, pero al cocinarlos pierden  una gran parte de sus nutrientes


Crema de Champiñones Shiitake:

Lo que necesitas:


4 tazas de caldo, yo use de vegetales porque no tenia de champiñones pero cualquier caldo funciona, tambien puedes usar caldo de tubo (agua).
1 cucharada de aceite de oliva
1 cucharada de mantequilla
1 taza de cebolla, picadita
3 tazas de champiñones, puedes usar de cualquier tipo, picados (no importa como, ya que van a ser licuados)
3 dientes de ajos picaditos
3 cucharaditas de tomillo fresco
1 taza de crema de leche espesa 35% de grasa (crema para batir)

Que hacer con esto:


Calentar el aceite de oliva y la mantequilla en una olla grande a temperatura mediana-alta. Agregar la cebolla y sofreír hasta que este suave, por 5 min aproximadamente.

Agrega los champiñones y sofreír hasta que este dorados y tiernos, por 8 min aprox.




Agregar el ajo, tomillo, y sofreír por otros 2 minutos. Agregar el caldo, la crema y llevar a un suave hervor.






Reducir a temperatura media y cocinar lentamente hasta que la sopa espese un poquito como por 10-12 minutos. Luego pasar la sopa a una licuadora y licuar bien, regresar a la olla, cocinar a fuego lento, probar la sazón y agrégar sal y pimienta negra al gusto. Servir.
